Couscous with Mint and Pine Nuts

Recipe courtesy of Harvard University Dining Services
Serves 4
1 1/3 cups whole wheat couscous
1 cup low-sodium vegetable stock plus ½ cup water
1 teaspoon olive oil
¾ cup currants
¼ cup toasted pine nuts
¼ cup chopped fresh mint

Bulgur Pilaf

Recipe courtesy of Harvard University Dining Services
Serves 4

1¼ cups low-sodium vegetable broth, heated
1 cup bulgur
1½ tablespoons olive oil
1 clove garlic, minced
½ cup tomatoes, chopped
½ cup sun dried tomatoes, minced

Eating less salt is good for everyone's health.

Americans consume one-and-a-half or more teaspoons of salt a day. That's far more than is needed to satisfy the body's need for sodium, the main element we get from salt. And that’s a big problem: A high-sodium diet can raise your risk of high blood pressure, heart disease, and stroke.

Mulled Wine

Mulled Wine - a Winter Warmer

With winter on its way those cold lagers and chilled white wines can seem less appealing than they did on hot afternoons around the barbeque. A heavy red is a good alternative on a chilly evening, but for a really warming beverage you can’t beat a good mulled wine.

Rich Vegetable Stock

Yields about 1 gallon or 16 1-cup servings

If you buy vegetable stock, you’ll likely get a product with a lot of sodium but not a lot of flavor. By making your own stock, you can control the amount of sodium and create an incredibly flavorful base for soups, stews, risottos, and other dishes that call for stock as the primary cooking liquid.

Mushroom Stroganoff

Serves 4

This recipe uses umami-rich mushrooms in place of meat to create a rich, savory sauce that can be served with whole wheat noodles, wild rice pilaf, barley pilaf, or farro. If you make your own vegetable stock, you can control the amount of salt you add to it. If you buy vegetable stock, compare brands to find the one with the least amount of sodium.

Carrot and Coriander Soup

Asparagus with Warm Tarragon-Pecan Vinaigrette

Serves 4 to 6

Try this sparkly dish as an appetizer all on its own, so it can get the full attention it deserves.
  • 1½ pounds fresh asparagus (medium-thick)
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons sugar or light-colored honey
  • 2 tablespoons olive oil
  • 1 cup minced pecans

Health Gains from Whole Grains

For millennia, the grains humans ate came straight from the stalk. That means they got a carbohydrate package rich in fiber, healthy fats, vitamins, minerals, plant enzymes, hormones, and hundreds of other phytochemicals.
Even after we learned how to grind grain, we still got all of the goodness that grains pack in their three layers. Whole grains have a tough, fibrous outer layer called bran that protects the inside of the kernel. The interior contains mostly the starchy endosperm. Its job is to provide stored energy for the germ, the seed's reproductive kernel, which nestles inside the endosperm. The germ is rich in vitamins, minerals, and unsaturated oils.

In the midst of a full and busy life, it’s easy to let taking care of oneself take a backseat. All too often a quick trip to the drive-through becomes habit and health and energy suffers.
