Why diets don't have much reliability?

Why diets don't have much reliability and quite often make you fat?
So many dieters looking for answer on this question. Indeed, WHY? 
I found the answer in TED Talks. Sandra Aamodt is a neuroscientist explains this problem very clear.
The main idea of her speech is the fact that hunger and energy are controlled by the part of the brain called HYPOTHALAMUS. It regulates body weight. So, if you on diet and lose a lot of weight, your brain reacts as if you were starving. You become hungry; your muscles burn less energy and their metabolism is suppressed. When you finished your diet, the brain reacts as if it needed to fill up the empty place, and maybe put more (just in case of the next famine). This means that a successful dieter must eat this much less forever than someone of the same weight who has always been thin.
From an evolutionary perspective, your body’s resistance to weight loss makes sense. When food was not available enough, our ancestors’ survival depended on conserving energy, and regaining the weight when food was available again to the next shortage. During of human history, starvation has been a much bigger problem than overeating. That’s why, set points can go up, but they rarely go down. It is the memory of our generations for survival. That’s why diets don't have much reliability.
What we have to do?
Sandra Aamodt says that there is the simple way, which, in my opinion, easy to say but not easy to do for many people. She says that you have to learn how to eat mindfully. In other words, you should create the healthy culture of your lifestyle and nutrition with some rules and traditions and simply follow them for the rest of your life J.
Actually, it is not very hard to do. In the beginning you will feel some difficulties, but after a while your brain decides that this lifestyle and nutrition is new normal for your body, and your life become much easier.
